Corn Fritters Serves/Makes: 7-8 fritters Corn kernels from 2 ears corn
2 ears of corn, corn scraped off with a corn creamer or with a grater
3 Tbsp. corn meal
3 Tbsp. all purpose flour
2 Tbsp. heavy cream
½ tsp. salt
1 egg
Oil for frying, about ¼ cup
Mix together all ingredients except for oil. Heat the oil and drop about 2 heaping tablespoons per fritter into the oil. Fry for about 1 minute on each side until browned. Put on paper towels to drain.
