Bok Choy with Mushrooms

Bok Choy with Mushrooms
Serves/Makes: 4

1 large bok choy
8 oz. cremini or white mushrooms, cleaned & sliced
˝ cup chicken or vegetable stock
˝ tsp. salt

Cut up bok choy leaves & stalks into bite-size pieces. Add bok choy and mushrooms to large sauté pan with the stock. Simmer, covered, for 10 minutes. Add salt and continue cooking, uncovered, until stock is mostly absorbed.
